*Head Shaving for my Step Dad*

This is were I ask you to turn your heads and know that I mean no disrespect to any of you, when I say.......*F#CK Cancer!!*. And I wont apologize for cursing. (and yes that is an actual name of a website about cancer, no really, go check :) )

Okaaaaaay, now that I have that out of the way :) Are you still with me??

So this obviously has nothing to do with Vegan or Raw Vegan foods.............or does it? We all know that we are what we eat and what we put in or do to our bodies. But I wasnt meaning for this post to be about health or what good or not good for Cancer. Etc.. However, that subject is always on my mind and is a huge influence in my life and the way I eat. BUT BUT......I will talk about all that later :)

RIGHT now, I just wanted to post some fun things I did for my StepDad, whom unfortunately has been diagnosed with stage 4 Lung Cancer xoxo. The side effects from the Chemo have been difficult, one effect that he is NOT happy about, is the hair loss. When I visited him in Northern California for a month earlier this year, he often joked with me about me shaving my head like him. XOXO!

SOOOO........the other day, I took him up on it. It's the least I can do for him to show my support and to say..........."F cancer".

Shauna's Raw Vegan Ice Cream

*Summertime and the living is easy......especially with Raw Vegan Ice Cream.....*

Happy Summer everyone! So it has been 95 to 100 degrees here lately. {{pant pant}} And a muggy heat, nothing like the hot DRY Summers I was used to growing up in Northern California. Here in Ohio, things get steamy...I'm not a real fan of the humidity. Soo with that...."I scream, You Scream...we all scream for ice cream!!"...........

So I thought, what is a great and yummy way to beat the heat?....(besides jumping into a nice cool swimming pool) Would be to try my hand at making Raw Vegan Ice Cream. I tried out two different ones. The first is more of a Mango Sorbet than an actual Ice Cream (pic shown above). What ever the case, it was delicious. The second was a Coconut Cashew Ice Cream, (my fav! pic shown below)

I actually first made the little Macaroon cups to hold the ice cream. (oh my gosh, they are awesome.....coconuty, salty and sweet, I keep the finished product in my freezer in a zip bag and find myself just grabbing one without even putting the ice cream in it haha....but I'll get to that in a moment)

SOOO let me first start with the Raw Vegan Macaroon Cups (seen holding up the ice cream in the pics) It is a simple recipe of raw cashews and dried coconut flakes, not that sugary stuff you find in the baking section. I use "Let's Do.....Organic"; 100% Organic Shredded Coconut, unsweetened." This stuff is thee only dried coconut flakes that I use. The coconut is processed super fine, so you don't get those big chunks of dry coconut like you do with your usual bagged processed coconut flakes. I love this stuff.

ANYWAY......the Macaroon cup recipe goes a little something like this. (OF COURSE you do NOT have to make could just make the ice creams on there own and enjoy with a spoon and a smile. :) I just thought the little Macaroon cups were cool and added a little upscale ooo'la la to the ice cream. But no biggie. Although they taste frickin' yummy and are good alone as little chewy coconut snacks or cookies even. Yum. (am I rambling??....ok tooooo the recipes haha)

*Macaroon Cups.....or cookies :) *

double the recipe and freeze for quick snackies...nom nom. Also, these are meant to be bite size, so I use a small tart pan for these, about 2 Tbs of "dough" for each one.

1 cup shredded Coconut (I use the fine shredded coconut "Let's Do.....Organic"
1/4 cup raw cashews, dry
1/8 tsp salt (I use Kosher)
1/8 cup Agave syrup
1/8 tsp real Vanilla extract

Combine the coconut, cashews and salt in food processor OR high speed blender (I use my Vitamix) until a fine powder. Add agave and vanilla and mix.

To make cups.....scoop about 2 Tbs of dough and form into a ball. Flatten gently with your thumb to create a little "cup". OR (the way I do it) if you have a tartet pan, you can put the dough into each tart cup and flatten out and then gently form a cup shape to hold the ice cream. Make sure to not go all the way through the bottom of the dough. :) Place cups in freezer for a least 30 minutes. I freeze them first in there tartlet pan then I pop them out and stick the prepared cup molds into a zip freezer bag. Keep em in your fridge for when ever you want to use them. When taking them out, let them sit for about 10 minutes to thaw before eating:)

NOW.....on to the Ice Creams........Awww yeah baby........First the Mango Ice Cream.

*Raw Vegan Mango Ice Cream*

Honestly....I just winged this recipe. So please do the agave etc.. to your taste. Try not to freak out.....its just food. Noooo biggie. Play around with it :) No matter how it comes out, it will still taste rockin'!

2 cups chopped Mango, frozen (I think I just used about 2 frozen mangoes)
1/2 cup raw cashews
a splash of vanilla
a squirt of Agave
Scant amout of water....enough to help mix.

Combine all in a high speed blender, I use a Vitamix. Mix until smooth. Either serve right away, or put ice cream in a freezer container and freeze til solid. You might want to let it sit out at room temp for a bit before scooping it out. And if you freeze it, it will be a tad bit icier....but heck, thats still good.

*Raw Vegan Coconut Ice Cream (Oh ohhh my)*

1 cup raw cashews, dry
1 cup water
1/3 cup agave syrup
1/4 cup fine shredded coconut (I use "Let's Do...Organic")
1/4 cup liquid coconut oil......butter.....same thing.
1/8 tsp vanilla extract

Combine all ingredients into a high speed blender......(yep you got it, I use a Vitamix) Blend well. Scoop mixture into a glass bowl or another freezer safe bowl. Place in freezer 3-4 hours...stirring every hour or so...then putting back into the freezer. Continue to do this until texture is to your liking. (I usually stir it once every hour, for the first couple of hours, then just leave it overnight in my freezer) Let it sit out on your counter for a moment to thaw a bit before serving.


NOW.......Grab a couple of those little Macaroon tartlets and scoop a rounded Tbs of your fav Ice Cream in the center.....and gobble gobble nom and a nom. AND do I EVEN need to mention how crazy good a Raw Chocolate ooey gooey syrup would be on top of these babies??....Well maybe not the Mango Ice Cream. But the Coconut one FOR SURE. Ohhh man.....raw chocolate and coconut, now my stomach is growling.

Shauna's Raw Vegan Brussel Sprouts Salad

These guys! These guys.....rock my world. Now first, let me tell you, I have always had a love-hate relationship with Brussel Sprouts ever since I was a child. My lovely Aunt Lysee tried to help, by calling them "little green alien heads". (hmm now that I think about that, I don't really know if that was trying to help or not lol).......What ever the case, now both myself and my husband call them Alien heads........ ("ack ack"...yes that was a movie reference)

I used to HATE them when I was young, but now that I am older.....and the yumminess and potential of these awesome little guys......I love them! Both cooked AND raw.
Raw??...You say. Why yes. Absolutely! Just think of these little gems like tiny baby cabbages. (nom nom nom) I have to be honest and say, I am pretty new to the "eating them raw" idea as well. But, tonight I thought I would try a simple humble salad of raw Brussel Sprouts. Quick, easy, fresh and pretty darn good.

First.......After rinsing and removing a couple of the outer leaves. Thinly slice Brussel Sprouts into rings.....nothing crazy, just thin slices :)

Now make a quick simple dressing. Tonight I used Lemon and Extra Virgin Olive Oil with a little salt and pepper, then top with some chopped Almonds. See, I told you......simple.

First the Lemon........

Then some Extra Virgin Olive Oil.....

Mix it up in a bowl with some salt and pepper. Crazy easy. Mix with the Brussel Sprouts, top with chopped Almonds, and Voila!

Now of course, you could add any other delicious dressing that you would like. I was actually I was nibbling on this yummy salad......that it would probably be crazy good with some sort of Asian style dressing. Perhaps......some garlic, ginger, tamari, almond butter.....????

But tonight....I kept it simple. :)

If you are not ready for the Raw thang....well then.....roast those babies with a little olive oil, salt and pepper. Halve them first, then throw them in a 400 degree oven for about 20 or so minutes. SERIOUSLY.....yummy.

Either way you have them......Alien Heads....It's a good thing. :)

*Stupid is as Stupid does*

Soo, I fully intended on making a new video today. I was thinking of one of my favs...."Sun Dried Tom Brazil Cheeze" So so good. So where is this "so so good" recipe and video? Welllllll......let me just say that I had a "stupid is as stupid does" moment today when I stupidly forgot to warm up before my extreme workout today. And with that, a snap....and pop....and few unfortunate curse words later, and I'm stuck on the couch, with an ice pack and my leg propped up. {{sigh}} My hamstring is shot, I think I tore a muscle. Aye aye aye I say! {{Insert a Lucille Ball whine here}}

I'm not a happy camper today......heck at this point, I can't even gimp to the campground.

So my lovely boys and girls...the lesson of the day isssss.......don't forget to warm up and stretch before yo' workout. Yep :)

Ok.....I'm going to go take my gimpy whining butt to the couch now haha. BOOOOO I say BOOOO! I don't do gimpy well lol. ;)

*How to Open a Young Coconut*

So, yesterday I looked in the fridge and remembered..."I HAVE a Young Coconut!!" Mmmm. How could I have almost forgotten about that lovely little thing. Ya see, Young Coconuts are hard for me to find here in good ol' Cleveland. Our local store only carries them once a year and for only a week. What's up with that?? And our health food store, which is Whole Foods, is about an hour away from me (lame) and even then....they sell their Young Coconuts for $6!! EACH! WHAAAA???

The one I had yesterday I got at our local grocery (the one that only sells them for a week) Needless to say, I almost screamed with joy and jumped up and down in the Produce section of the store. I was able to maintain soooomewhat.....I might have let out a small muffled screech....perhaps startling the person next to me :)

Once I remembered that I had it in my fridge, I thought I would make a quick video on how to open it. Cause honestly, the first time I ever saw a Young Coconut, I was like..."Whaaat in the world is THAT thing??....Do I peel it??....hit it with a hammer??..."

The answer is no to all of those, haha. How do ya open one you ask...(you did ask right?) Well then....take a looksee at the video below :)
