Where am I??....Wait....who am I again?......

I'M STILL HERE! Really I am! Ugh! I can't believe I haven't blogged in like 2 months. WTH man? Yes yes...I'm totally lame, I know. Ya know, it's weird, all I think about it vegan food, raw food, blogging, making new Youtube vids blah blah and blah. But for the life of me, I don't know why I have't blogged or made a vid in the last couple of months.......perhaps I have just needed the mental break, I don't know. I mean, there has been A LOT going on this past year. (that will be another blog lol) But I just wanted to say, for those whom are still hangin in there with me (yay!)........that I'm not gone. I miss blogging and making vids......I WILL get back in the groove of things again. I PROMISE!

I totally blame it on the Cleveland water.......they must be putting something in there to make me lazy haha. ;)

*Shauna's Raw Vegan Almond Cream Cheese*


Let me say, of course this isnt really "Cream Cheese" haha. But heck, it's creamy, and is a little sour like cheese....and it isnt bad for you or the animals.....sooo haha, there ya go. Was that just a disclamer? LoL. {{Grin}}

So, my friends, there was a glorious time when I could make this "cheese" with Raw Macadamia nuts. {{sigh}} But now that they are around $20 a pound for them (how is that EVEN possible!? Utter craziness!)....I now use Almonds. (which is GOOD, just not the same....LOVE Macadamia! I tell ya!)

Let me fill you in. A long time ago, I ran across a recipe for Raw Macadamia nut cheese. At the time Mac nuts were at a fair price, so I tried my hand at this recipe. It became one of my favorites. It was so simple to make and had only 3 ingredients. The taste of Mac nuts turned into cheese is ooooh so awesome. It's gotta be all that fat.....(good fat might I add) The original recipe was something like..... Raw Mac nuts (NOT soaked) blended with water and Pro-biotic powder, usually in capsule form, then set out for a bit to "ferment" (Pro-biotics can usually be found in most Drugstores, by the Vitamin or Pharamacy section, make sure that it doesnt have any milk or geletin in the product, I have made this mistake before....grumble grumble).

Ok, so now that Mac nuts are a rare delicacy......I wanted, and needed to find a way to make a similar "Cream Cheese" kinda thang.....yes thang. I thought about Cashews, but I already knew that those guys wouldnt work....good texture but not the right flavor...I went down the list of nuts, all with their own textures and tastes. The only one that would be similar to the Macs was Almonds. NOW, the huge difference between Mac nuts and Almonds is the fat ratio. Mac nuts are beautiful and fatty....which makes fantastic kick a$$ Raw Vegan Cheese. (man I miss them....people, don't send me flowers, send me raw Macadamia nuts! Haha!)
Now, Almonds, they too make great cheese, however, they are not as "fatty" and often become gritty when blended. Thus, a good blender is essential when making Almond Cheese. Which is one of the reasons I usually DON'T make Almond Cheeses....even with my high power Vita-mix blender, it takes forever to blend to good creamy texture.

BUT!.......dun dun DUNNNNN........

I finally was able to make a fan'tabulous...Almond "Cream Cheese". I even think those without a high power blender can make this! There are a couple tricks...........

Numba One!.....Soak those bad boys overnight first. Makes a HUGE difference. Basically soak Almonds in enough filtered water to cover, overnight. Next day, drain and rinse. Yep.

Numba Two!......Boil a pot of water......blanch the almonds for a minute of two, strain, rinse with cold water (otherwise you won't be able to handle them ;) ) AND then, in a bowl, pop off the skins.

Now, this process takes a moment or two.....or three ;) So, take a breath, find your Zen moment and get to pinching. The almonds should pop right out of their skins.

 A quick little note.......these babies can be slipperly little suckers. I almost always pinch an almond and have it go flyyyyying across the room. I even hit my husband with one once {{GRIN}} Soo, just laugh it off and try to get them in the bowl :)

Once shelled....I just throw the skins away. (Ya think they would go good in compost?? Hmm....)

NOW.....once the Almonds are prepared, let's get to the recipe shall we? :)


  • 1 Cup Almonds (prepared the way we discussed earlier)
  • 1 Cup Filtered Water
  • 1 1/2 TBS Lemon Juice.....about 1/2 a huge Lemon or whole small Lemon
  • 1/2 tsp or 2 Capsules of Pro-Biotic powder, (powder ONLY, NOT actual Capsule) (OPT)
Blend Almonds in blender, just to get them ground us a bit before we add the water. Add the Lemon juice and blend again. Now, add the water and blend until creamy. You may add more water if needed. It will be loose and kind of yogurty looking. It will thicken as it sits later.
    Once creamy. You can now, if you want.....add 1 or 2 Pro-Biotic powder capsule. NOTE: The powder ONLY...NOT the actual capsule) Once, all is mixed well. Put "cheese" into a glass bowl and cover with some cheese cloth (I use my nut mylk bag, and just put my little glass bowl inside the bag and close it up)
Let the Cheese sit on a warm counter for 8-10 hours. YES...I know, this sounds way weird and your brain is thinking....."Is this dangerous??"
NOPE :) This is the process to make it taste cheesy and get a little sour. Sitting in a warm spot on the counter will activate the fermentain process and the Pro-Biotics will help to make it into "cheese".

(The above is still a little gritty....blended some more and added a little more lemon juice)

Here is the finished product. I let my cheese sit on on the counter for about 10 hours, tasting it here and there for sourness (it was covered lightly with my nut mylk bag to let it breath and to keep any little flying creatures from getting into it...hey, they might like Almond Cheese too! Lol)

Now I have some notes and final things to do to this, once it has sat out and fermented a bit, just enough to make it sour to your liking. Here are some notes:


  • SALT: The finished cheese will be bland, but should be soured because of the lemon juice and the fermentation. This is where I do some adding......I almost always add some Sea Salt, I have a grinder for my Sea Salt, so it grinds really fine crystals, makes for better blending. Now, of course, you don't have to add salt if you don't want to, but I find it gives a depth and a more savory flavor.....kinda like real cheese....a little salty, a little sour.
  • HERBS: You can also add any herbs you want at this point.....Thyme, Parsley, Red Chili Flakes (thats what I did, I am a pepper head)
  • SWEET: You can also, leave out the herbs and or salt....and drizzle the finished "cheese/yogurt" with Agave, or some other liquid sweetener. Treat it like Yogurt :)
  • FRUIT: Feel free to top off a scoop of the Almond Cheese with fresh fruit....say Blueberries? Raspberries?? Once again, you can treat this like Yogurt.
  • SOUR: Not sour enough?? You could add a little more lemon juice to the mix, it's up to you.
  • CHEESY EXTRAS: You could OF COURSE, add what ever you want to the finished product, like spices, or Nutritional Yeast. BUT, I like mine plain and simple, like a Cream Cheese. I make other kinds of nut cheeses with different nuts if I want....other kinds of nut cheeses haha ;) That sounded confusing hehe.
BASICALLY, my Raw'kers.......
  1. Eat it like Cream Cheese.....on raw bread, raw crackers, cut up know :)
  2. Eat it like Yogurt......with fruit, liquid sweetener......however :)
  3. It gets better tasting the longer it sits and will be even better the next day.
  4. Once it has "soured" to your liking. Store it in the fridge and it will keep for 4-5 days.
SOOO MOVE OVER HIGHLY PRICED MACADAMIA NUTS......YOU HAVE BEEN REPLACED!!..........oh, no no!, I'm sorry Mac nuts, that's not true!...I still love you! Really I dooo! You will always be my number one bff Nut XoXo!

I thought I would quickly share this crazy good nut cheese with you this morning. It is truly one of my all time favs!......oh wait first........GoOooD MoRrrNInG EveRYboDY!!

Ok, now, where was I? Yes....the oh' so awesome Brazil Nut Cheese. {{drool}} I didnt take that many pics, sorry guys, I know, kinda stupid, since I'm BLOGGING haha. Durp. But you will get the idea, I hope ;)

Let's just start off with the recipe, shall we.
(I like to rinse my Raw Brazil Nuts first. NOT SOAK.....just rinse please)

*Sun Dried Tomato Brazil Nut Cheese*
(feel free to half this recipe if you are a single Raw'ker)

1) 3 med cloves Garlic (2 if you are scurred of Garlic)

2) 1 tsp Kosher Salt (yes by all means you may use Sea Salt or any other salt for that matter)

3) 2 cups Raw Brazil Nuts (NOT soaked, just rinsed well first, to get rid of any "mildewy" taste. Is it just me or has anyone else noticed that Brazil nuts can have a.....mildewy taste if not rinsed??)

4) 2 Lemons, juice.....errrr is that 4 Tbss? Or more to your taste :)

5) 1/2- 3/4 cup water as needed

6) 1 cup Sun Dried Tomatoes, chopped (half blended in, half stirred in the end)

(I have used both a food processor and my Vitamix for this. I have found that the food processor works the BEST.)

Put garlic and salt in processor and give it a whirl. Add the rinsed Brazil nuts and blend into a powder. Add lemon juice, HALF of the sun dried tomatoes and 1/2 cup of the water (to start) Mix well. Add more water as needed to make a heavy cream......yes it will be more loose that a thick cheese at this point. It will thicken as it sits. Once it is blended well and is as creamy as it is going to get. Put in the last 1/2 cup of Sun Dried Toms.....give it a quick whirl to incorporate. Place Cheese in a bowl, I use glass storage containers and either eat now, yum, or put in fridge to chill and get thicker. Awww yeah baby.
Raw Brazil Nuts......good for your brain....{{{Brrrraaaains......}}} Sorry too many Zombie movies.
Now, I use Sun Dried Tomatoes WITHOUT the oil......just good ol' dried Toms :)

LOVE.....and LOVE LEMONS. Honestly, Lemons are great for almost everything! But here, well, they are just good for your taste buds ;) Mmm......

NOT the greatest photo of this glorious cheese.....(stupid camera) But let me tell you guys......I adore this cheese. It goes soo well with anything from, crudites......(did I just spell that correctly??) Ok, basically cut up veggies......or perhaps in a collard wrap with saaaay, avocado, cucumber, red bell pepper?? (Ok, I just drooled on my keyboard) OR how about making some raw vegan bread or crackers and putting some of this cheese on them?? (yep, I'm down for that YUM)

80/10/10........"Date Banana Shake"

Now, do I follow the 80/10/10 diet? haha. But do I play around with the idea?...suuuure :) I am always open and willing to explore whats good.....or not. Regarding the 80/10/10 Diet, I find it interesting and will probably start incorporating recipes here and there and see how I feel. I WOULD like to cut back on my nut intake lately, just because I would like to lean myself out a bit (hello badonka donk) NOT that nuts are bad, they are indeed very healthy for you and have mannny wonderful benefits.....however, maybe that doesnt apply if you are eating a whole raw vegan chocolate nut cake {{GRIN}}

Ok, since I am not master of the 80/10/10 thing and really don't know all about it, I will not go into that here. (I must research! Mwa ha Haaa haaaa.......yeah, don't know where that came from) So with that, I will just say, since I have been interested in some of the recipes, I thought I would first give this shake a try. I saw it somewhere out there in cyber here is what I did.

The recipe is ohhh so simple....if ya even want to call it a "recipe". Heck, it's just bananas and dates....sooo uh {{scratching my head}} I guess its a recipe :)

Servings 2.


FIRST.....I took a scant cup of Medjool Dates (PITS REMOVED PLEASE haha)......
(Above: The lovely Medjool with pit still inside.....sqwoosh them with your fingers and the pit should be easy to remove.....)
(Above: The pits are easily removed, if not by hand, then a little cut with a sm. knife will do the trick)

(Medjools are moist and sticky..soooo good)
I used about a scant cup of Medjools for this.....this made enough for 2 servings! ;)

Put the Dates and two Bananas in a blender....
Now at this point you can just add enough ice water to blend. HOWEVER, haha, I thought I would add a little Pure Vanilla to the mix....uhhh yum. So I did :)
I just added a splash......feel free to do this to taste :) Once everything was in the blender, I added a couple of ice cubes and some filtered water to mix. Then whirled that bad boy up.
Whirl whirl....blend and ah' whirl.......
When finished.....I poured a glass......mmmmm.
NOW the taste test........


My findings are.....this is a very simple and good shake, will definitly get your blood sugar going in the morning. NOW, I also found it to be REALLY sweet. Like, almost cloyingly so. I adjusted the ice water to suit my tastes. But it is clean, good carbs....and loaded with minerals and vitamins! I'm thinking that this awesome shake would be kick a$$ with some Raw Cacao Powder added to it.

Stupid MCrap'Donalds has nothing on this shake....especially the chocolate version.

*Lossssst innnnn Spaaaace...*

I just realized as I looked at the calender, that I havent blogged since the 10th! Whaaat?? {{bad Shauna baaaaaad Shauna!}} My brain has been lost in space lately. There have been some issues going on recently that have been taking a toll on me emotionally and physically. Somedays I couldnt find my head if it wasnt screwed on. (wait, do heads screw on??)

Anyway, I just woke this morning, late again. I seem to be doing that a lot lately. Maybe my body needs the rest. I hope to get back into the swing of things with new vids and blogs once I get my butt to the store to get some well needed groceries. I have been living off of beans lately....and no one wants to read about me making beans EVERYDAY haha. No don't lol. The recipes are nothing special...basic throw together dishes, ok....usually the same dish, over and over again. Which brings me to...........I NEED to go to the grocery store stat! LOL!

Alrighty then, I'm off to go wake up and see what I can make for lunch.................BEANS!!!

*RAW VEGAN HEAVY ALMOND CREAM & ALMOND FLOUR* ...."two, for three, for one".

Yesterday I got back in the kitchen and made a new recipe video. Yaaay! But for some stupid reason it took me 5 hours to upload...FIVE HOURS! What in the world?? That is just crazy. Anyway, it's up and I will stop griping now haha. (Video will be posted below)

The video will be kind of a three parter. My initial intent was to make a vid for my Raw Vegan Chocolate Macaroons. (Did I already blog about them?? I think I did, I think I even put a pic and the recipe) Anyway, I wanted to do a vid, but realized that I didnt have any Almond Flour, (which is needed for the recipe) So, why not make a new video with that process as well? :) Cool. With that, I got in the old really I have an old kitchen, not very happy about that.....AND put together a vid for "Almond Cream" & "Almond Flour".

My husband calls these recipes where I have multiple uses for one item "Two, for three, for one".

It goes a little something like this (why did I just think of the Beastie Boy's song when I said that?..."She did it like this, she did it like that....she did it with a whiffle ball bat....aaaaye.")

I DID happen to mention that this blog is called "RAWKIN it Vegan"?? So umm, yeah, I can't help but add some music references here and there.....{{GRIN}}

Anyway my fellow Rockers.....where was I? Yes, Almond Cream. First things first, when making my milk, I usually soak my almonds in water (enough to cover by an inch) overnight, then drain and rinse before using.

Almond Cream is pretty darn easy to do, it is very similar to Almond Milk, same process, just less water, (not the soaking water, the water you use to make the milk/cream haha). With reg Almond Milk, the usual ratio of water is somewhere around 4-5 cups. With Almond Cream, you use less, like, 2 1/2 cups water. Basically by using less it creates a richer more dense "cream".

The cool thing about making your own Almond Milk/ that like my hubby said, you get "Two, for three, for one". Or something like that haha. Out of one cup of almonds and some water, you get Almond Milk/Cream, Almond Pulp/Flour and THEN what ever you make with those two products, like cookies, bars or heck, maybe even a crumble. Sah'weet!

Once the cream is made, I then (usually) put my almond pulp in the good ol' dehydrator for 24 hours with the temp set at 104ish degrees.

 Once my almond pulp is dried overnight, I usually throw it back in my blender and whirl it up to make a nice fine flour. Simple and oh so cool. (Damn, I just made my own flour! Who woulda thunk?)

Now my fellow you go.....take that Almond Cream and Almond Flour and make something delicious and awesome! Because YOU are awesome and I think you rock!

*Goooood Moooorning World*

Alrighty, so I woke up late today and after doing some work on the computer I just realized that it is already noon. Ok actually 6 minutes til noon, so I can still say Gooooood Morning WOrLd!!

I'm going to go grab a LaraBar for break'a'lunch (breakfast/lunch) and then get my butt in gear and try to work on some new videos.
Mmm, LaraBars are yummy. If ya havent tried them, my fav is the Cashew Cookie....just raw cashews and dates, that's alllll. But they have tons of other awesome ones as, cinnamon, cherry, lemon, pecan....the list goes on and on! Yum!
{{{BITE}} Mmmmmmm....... I type with my mouth full lol. So with that, I am going to go munch, then see about a new Raw Vegan recipe vid.

ANY SUGGESTIONS??? Huh? Huh?? lol ;)

I was going to do something with my Young Coconuts that I just bought and my Raw Cacao Powder....perhaps a Raw Chocolate Pudding?? AND THEN.....{{scratch that idea}} I opened one of my coconuts and it was bad!! What the Hell'z man?? I HATE that. Total bummer dude. But I did take a cool pic of the good one haha. Seeeeee........

Alright then.......nuff rambling for now. I'm off to Ze' kitchen to work some recipe magick.

*Shauna's Raw Pine Nut Parmesan Herb Cheese*

*Raw Pine Nut Parmesan Herb Cheese*......a.k.a *X-Spread*

So first let me tell you what X-Spread is.....ohhh' glorious X-Spread. Once upon a time, there was this waaay delicious cheese spread called "X-Spread" made by our local grocery store Heinen's. I call the smell of this cheese "Fairy's blood" (Wait....What did she just call it?? Yes that is a reference taken from HBO's show True Blood...if you havent watched it, it is about Vampires (amongst many other things) as well as Fairies....whose blood the Vamps CAN'T resist.) this "X-Spread" smells SOO good it is like Fairy Blood to me......................ALRIGHTY THEN......are we still talking about cheese??

So I wanted to make or should I say try to make a Vegan version of this cheese, since I am Vegan and have issues with dairy. I looked at the ingredients on the cheese label and thought hmmm.....if I replace just might work...

(They changed the used to just be called "X-Spread"
Heinen's cheese is basically Olive oil, Asiago, Parmesan, Oregano, garlic and red pepper flakes. I can easily keep in the herbs.....The Parm? Well that can be subbed for Nutritional Yeast, same kinda cheesy about the Asiago cheese, hmm, Asiago is and distinct right?? Soooo what if I switch that out for Raw Pine Nuts?? Hmmm.....this JUST might work!!

I grabbed my ingredients and put everything in a blender, waiting to put the olive oil in til last. After I gently pulsed the Pine Nuts a med grade meal in my blender, I put it in a bowl and drizzled in the olive oil. Tasted.....adjusted the seasonings and then had my husband smell it. IT SMELLED JUST LIKE THE X-SPREAD!! WHOOP WHOOP! (I'll put the recipe down below, but first here are some pics showing the original X-Spread and then my creation)

Now my Raw Vegan version (Awesome NON Dairy Cheese) below

NOW just because I recreated this into a Vegan version by NO means does that mean it is low fat. Just the opposite actually....this is probably all fat and some protein from the Pine nuts. So, don't be eating a bowl of this stuff.....well actually, it is healthy fats and if you eat a proper well balanced "diet" then I think eating this will be alllllllright :) NO animal fats, nope nadda and yaaaay!

I chose to slice up a Tomato and sprinkle some of the cheese in between the slices and then top off with some chopped Basil. Sooo good!

And then.....I ate the top off haha! MMMM.....

Ready for the recipe??? Oh and before I forget...lots of garlic in this yummy spread. Sooo, I guess I shouldnt call it "Fairy Blood".....cause with all this garlic, it will surely keep all the Vamps away. And please also note.....I just played with this recipe and don't really have all the knitty gritty measuring details of how much of this....or how much of that......but I will do my best at getting the right measurements for ya.



1/2 cup Raw Pine Nuts (dry, not soaked in water)

2 large garlic cloves

1/4 cup Nutritional yeast or more to taste (IF you want to just do the Vegan thang, you could also add Vegan store bought Parmesan yep yep)

1/2-1 tsp Oregano (this I did to taste, and note, it got stronger the longer the spread sat)

1/4 tsp red pepper flakes (once again to taste, don't be to afraid of these, it adds flavor and the heat is muted down by the fats in the nuts and olive oil)

1/4 tsp dried onion powder (the original recipe calls for green onions, I didnt have any, sooo...)

Salt and Pepper to taste (you want enough salt to make it salty like cheese, just don't over do it pretty please :) )


NOW.....put everything in a bowl. Drizzle in the Olive Oil. I used about

1/4 cup Olive Oil (I eyeballed this, you don't want it like soup, but you do want everything to be blended and moist)


Either serve now or put in fridge for a bit to allow the flavors to mingle. I used it right away on the Tomato slices and then the following day I nibbled on it with some rice crackers. I found that the day after I made it the seasonings were just right.....Hell'z yeah! I will keep playing with the proper measurements and when I do, I will DEF post any changes if......I change them haha. :)

So yep......give it a try. Fatty, salty, creamy, almost cheesy........a yummy indulgence.

*Fruit Girl!......more like Slacker Blog Girl*

UGH.....honestly, I want to blog.....and make recipe videos......and take pictures of glorious gorgeous vegan food. BUT..............I admit, I'm a Vegan Food Blog Slacker {{sigh}} I know, it is tragic.(thank you for the cyber hug) It deeply bothers me and I hope to do something about it soon. No really, I do I doooooo.

{{have I sighed already?}}

Sooo with that, I realize that even though I have been a blog slacker......and just a plain ol' bum lately. THAT at least I am blogging now :) Who knows who wants to read my typed ramblings of Vegan food, all I know is that I love being a foodie. I think about food, health and recipes morning, noon and night.....and even in between that time. I admit....."Hello, my name is Shauna and I'm a Vegan Foodie Dork".

Ok shall I stop whining on about how I should be blogging more AND JUST BLOG?? haha! Alright, tooo the bloggin' I shall goooo.

Today, is HOT and one more HOT here in North East Ohio. Seriously what has been up with all the crazy weather?? Anyway, Summer heat always makes me crave fresh juicy cooling fruits. Our local grocery store (which is doing an incredible job at updating and being current in the Vegan food scene...yaaaaay!) just happened to have some glorious organic red grapes on sale. Look at these bad boys........HUUUUGE and sooooooo SOO good.

I tell ya there is nothing better than NOT cooking in the Summer and just munching on delicious real whole foods. The store also had Watermelon for a great price. I think we got ours for something like $2.50! Uhhhhh......yeah!!

Seriously refreshing in this 100 degree heat......pant pant!

Sooo as I sit here and stuff my face with Nature's yummy fruits......I think to myself, how I truly want and desire to passion for the Vegan and Raw Vegan lifestyle.
